Yes. You can and you must.
Q: What does “burrowed safely” mean?
Has Burrow and Immobile while at this location, until it unburrows with its triggered ability.
Q: Can I intercept non-basic movement?
No. Only basic movement can be intercepted. The Mummies will still unburrow if an enemy unit moves above them, though.
Q: Do they tap when they unburrow?
No.
Q: What if a Stealthed enemy unit moves onto the site above?
Mummies will unburrow, but can't intercept stealth units.
